It's a nice, symbolic hat tip to a player who held significant meaning to this franchise.
It is asinine to have an issue with this because it hurts nobody. Some just need to show how they're just going to go against the grain to show everyone how high minded they are, when in reality, they're not.
An additional benefit of signing a highly accomplished player to a one day contract at the end of his NFL playing career is it demonstrates that the player is welcome back into the team family. In many, if not most cases, the player would then be an asset to the franchise even though he's no longer playing for them. Helping sell Free Agents from other teams is one of the unofficial roles and benefits he can provide. There's absolutely no downside that I can think of in signing a player like Greg Jones to a one day contract, when he's ready to retire.

The Jags have really put a focus on bringing back the alumni and using these guys to help promote the things they're doing. Adding one more guy to that mix who was also a popular player with the fans never hurts.

Not really. Think of it this way.
The NFL as a whole is a product marketed to fans. What do fans care about the most (other than winning the Super Bowl)? They care about their favorite players, coaches, etc.
I personally gave up my season tickets a few years ago for personal reasons. When Fred Taylor was inducted into the Pride of the Jaguars, I made it a point to not only get tickets to the game, but also get tickets in the club section right at mid-field only because I wanted a good view of the ceremony. For me as a fan spending my dollars, Fred's one day contract was something special.
