would 'Louisville swine' be more offensive or less? just having a hard time keeping up with what's offensive on here ever since someone said Michelle Obama looked like a monkey

I hate to say it but I see your point. Perhaps a way to look at what is proper is would you say it in person to the person or people you choose to disparage or only behind an anonymous keyboard?

Depends on if it was warranted or not. If a cops acting like a pig to me or have a poor history then yeah sure. If they're minding their own business then I'd leave them be
