The receiver did catch the ball and ran with it. There is no way you can call him defenseless.

What is this about nudging him out of bounds? I did not see that at all.

You are confusing this with Peyton's flag in the end zone when he came in high as a DB was already tackling the receiver. 

 

He was NOT flagged for the hit in this gif.

I don't know how they can do that. It is pretty obvious when plays happen in the end zone.

I recall the Jaguars beating the Patriots in the Playoffs, and the Patriots played their Punter Zolak at QB because their starter was injured.
