Yes you can.
You don't just change up the gameplan completely, you tweak it. You explain what they are trying to do on defense and show pictures and you make small adjustments to make it work.
I'm not comparing myself to an NFL coach at all. But I coach high school football and we adjust after the first quarter if we are getting beat at something. Then at halftime we go in depth about the adjustment.

I think adjustments made in-game or at halftime generally are the product of an assistant coach or coordinator in the booth getting informative screenshots (photos in the old days) down to the coaches/players on the field.
Some coaches and coordinators are more adept at making a tweak in coverage to plug up a vulnerability - or do the opposite on offense. Making such adjustments also requires that you have an "answer" for such vulnerabilities. Something the Jags roster has not afforded it's coaches much of in recent years.
Adjustments happen - but they aren't as common as some like to think, they definitely aren't only at halftime, and some "stretched-thin" rosters simply don't have the luxury as their best options are already being employed and still failing.

The only question I had is why is Bortles still in up 44-16 with 2 minutes to play and the Jags having possession? I'll chalk that up to Gus being in shock at the second half performance.
