My breakfast this morning came up in another thread, and I thought that it might make for an interesting topic. Feel free to post recipes.
For me my favorite meal is breakfast which I can eat just about any time of day. Being from the southwest originally, one of my favorite dishes is Huevos Rancheros which is basically a corn or flour tortilla smothered with re-fried pinto beans, eggs,
chile and cheese served with a side of fried potatoes.
This article has a basic recipe for the dish, though it's not exactly the way that I make it.
What are some of your favorite dishes?
My favorites are the one's that I don't have to cook.

A huge bowl of buttery mashed potatoes with 4 sunny side down fried eggs, two tins of beans, 4 streaky rashers, some sausages and maybe a bit of pudding all topped off with half a block of grated kilmeaden vintage cheese and then mashed all up together. Served hot with a big 1 litre shlump of milk.

Once I figured out what you were talking about, it does sound pretty good... but what the heck is a shlump?

A sump is a pit where liquid gathers so a shlump comes from that I think. Basically a big pint of milk.
Beef and seafood. Specifically beef tenderloin, lobster, shrimp, clams, oysters, crab legs, salmon. All grilled. Anytime day or night. I'm not picky.

You Irish and English fans need to try some of my southwestern cooking sometime.
Enchiladas are another favorite of mine. I like mine topped with a fried egg.

Do you like any of the seafood steamed and/or boiled? Most of it is good on the grill, but crab legs, lobster, etc. is much better (in my opinion) when it's cooked another way.

Steamed and boiled is good too. Steamed oysters and clams. Boiled lobster, crab legs and shrimp. Grilled beef, shrimp, lobster tail, and salmon.
Paella or picadillo with rice and beans.
Now I'm hungry...

I didn't know Copeland's had a brunch. I'll have to check that out.
