Sous Vide? Anyone try this?

Had some of the best beef brisket ever at a recent tailgate. Guy used sous vide method.

Anyone have any recommendations to buying this system?

Putting one on Christmas list.

The hardest part is keeping the water at an exact temp for an extended period. Modern glass and coil top ranges are too unpredictable for this cooking method.


Gas range for indoors is best.


You could fire up a trusty old grill, but be prepared to babysit.


Run the sou vide about 10 degrees shy of your preferred temp. Remove from heat/pot/bag, then sear it to perfection.

I thought the sous vide did the work as far as water temperature and circulation, and a stove wasn't necessary. I have a gas stove, but didn't think it was needed. The apparatus just hooks to a pot or some container and let re rip. Am I wrong?

That is how it works. You are correct.

 

Make sure when you seal up your meat of choice that you get all the air out. Ideally use a food saver vacuum sealer. You can use ziplocks but they don't work nearly as well.

What is happening to my Duval County?  The sous vide method????

 

Last time I heard something like this I was living in DC and Mayor Marion Berry was doing something similar.
