Publix is pricey as [BLEEP]. I'll get my cuts from there though. If it's one thing you never want to be cheap on it's meat. Dat Boar's Head though!!!

One tip though when picking out meat from any store. Always pull from the back of the shelf or row. That's where the fresh cuts should be.
I've read that some places have a practice of taking aged meat from the front or middle of the shelf that's browned a bit and they'll dip it in fresh blood or mix it with fresh meat to give it the appearance of bright red and freshness to save on losses. ![]() "What do I know of cultured ways, the gilt, the craft and the lie? The markdowns are where the best deals are, if they offer them. Better markets have a better understanding of their needs (and have cut schedules/lists) and do not do markdowns unless they are way off schedule (which is rare - no pun intended.)
There is nothing wrong with "browned" beef. It's that we've been conditioned as shoppers to buy the reddest looking meat. As long as you're buying from a shop you would feel safe with their "fresh" meat, their markdowns will be just as good (or even better.) If it passes the smell test and is not slimy, it's good (that's of course on the extreme end of "browned" beef, in case you're wondering about the meat that's been in the fridge a while that you didn't get around to cooking for a few days.) Let your steak get to room temp before cooking for a better cook, more tender steak.

I've been in the business and have never heard of anyone doing that. I've heard of distressed steak being trimmed and turned to ground beef or trimmed into stew meat, though as a way of cutting down shrink. Food Lion was exposed for shenanigans in the 90s, but I do not believe you're likely to find anything like that happening at a reputable meat seller (your Publix, Wegmans, Kroger, even Winn Dixie, though I would avoid WalMart meat.) Again, if you would eat their "fresh" package, I wouldn't be wary of a markdown package. If you think someone would mishandle any package, I wouldn't trust the "fresh" looking one, either. Just because it's red doesn't mean they weren't just cutting chicken or pork and didn't clean their knives/blades in between. It's all whether or not you trust the shop. Most of them get the same beef from the same packer IBF/Tyson. I doubt WalMart does, and if they do... it's a much lower grade than the better stores provide, there is a difference there and it is certainly not good.
