Genuine question: in games like these, when zone isn't working and players seems to be a bit lost, wouldn't some basic man-coverage more effective at least to mitigate the issues in an easier more immediate way considering our players are talented enough? I'm not talking about preparing the game like that, but as in-game adjustement when QB's are getting rid of the ball quick and with accuracy like Jimmy G.

To your last sentence, I surely hope they'll adjust for that type of opponent. Brady would have a career day if we play like that and maybe other teams that forced some stuff on us (like Pittsburgh did) will start to adjust as well if we meet them again.

I would think so, yes. I think perhaps one reason they don't is because they are hoping to minimize one on one mismatches where slot receivers and TEs are being covered by linebackers.  Although - I'm not quite savvy enough with the various schemes to be certain of all of my scheme assumptions. 

While LBs still get caught covering such players in zone coverage, ideally they'd get help from a safety once the WR/TE gets far enough beyond the L.O.S.
In man coverage - there's less chance of that help.
