These prosecutors cast wide nets for a reason

They didn't need to charge them, they could just have them testify, most had already done so. They were overcharged in order to get them to take the plea deal. Now the DA can claim they were all guilty but none of them have admitted any guilt for racketeering charges. Even their apologies didn't admit guilt.

They were probably stupid for taking the plea and maybe they can get it reversed once Trump presents the evidence but they did it so they could avoid the $100,000s in legal fees.

There's a little thing called the fifth amendment you might be forgetting about.  In a conspiracy case, anyone forced to testify will say that a truthful answer might get them in criminal trouble. But the prosecutor is still unable to prove which member of the conspiracy did which crime.  In a plea deal in exchange for testimony, the prosecutor states that there will be no further criminal charges for truthful answers, so the fifth amendment no longer applies.
