Honest question because I don't fully understand the bureaucratic financial machinations involved. Why is it said that SS will go broke in so many years? Is it because government bonds are of decreasing value?

Lots of boomers retiring and declining birth rates over the years means there are less workers paying into the system compared to number of people receiving benefits. It's basically a giant ponzi scheme if you think about it.
