Whenever I try a new Mexican restaurant I try to get a few minutes with the manager or owner, to politely pick his or her brain about what they feel are their specialties and also what and how they cook for themselves. I'm fascinated with how other cultures, especially those in poorer countries, can use limited resources, waste no part of a vegetable or animal, and create delicious food. That one is my favorite one too. It's pretty much the only La Nop we go to.
