occasionally quick, but your gonna be trying to mimic a shrimp, so u wanna pop him an let him sit cause that's when he is gonna get waxed... trout will bite the tail off, red and flounder normally strike a little harder so they get the whole bait... i always go through the nose even tho thats not how shrimp will kick... i feel like normally, fish see the kick and not which direction it came from so they strike after it settles or while it's falling...with gulp, they have a lot of scent that attracts as well, so even letting them sit on a oyster bar can be productive... as far as getting them to not just get the tail, u can find longer hooked jigs that set the hook farther back but its one of those things just happens, at least you know he fish are there and like your bait
