I'm of the mindset that Jaime respects Brienne for who she is in totality and while she's a very stiff woman in the figurative sense, she's one of the few "points of light" left in Westeros.

 

Regarding your later point about Hodor's death. I definitely put it in my top 5 saddest on-screen moments. That was some Old Yeller (seeing it for the first time) type stuff. My best friend's wife literally started crying. Between Summer (she LOVES animals) and Hodor, she lost it.
