Admittedly, I know way more about grapes that make good wine or diagnosing a problem with bad wine than the actual wine making. But in my experience you'll probably end up with a "tannic" or "hot" wine, meaning it will give you an acidic or mouth drying effect. Some people like that though, one of our better wine regions in Ca is pretty famous for that style. Wish I could help more! If you're making it a regular hobby and have any specific questions I know some actual enologist that can probably answer some stuff. |
