Super Bowl Food

I'm making spinach puffs for the party I'm attending. Don't judge me.

Quote:Then why don't they call them the Seattle Ospreys? That's dum.

They're probably both quite tasty with the right seasoning though.

Seahawk is the local term for osprey. I have no idea why.

Because Starbucks started in Seattle, I told Mom to buy me a dessert there. They are selling football cookies, so she got that.

I also told her to get dill salmon because that fish lives in Seattle. The side dish will be broccoli because it is green.

Now if only the temperature was high enough for me to wear my Seattle Aqarium t-shirt too.

Quote:If I was watching the game at home I'd probably do what I'm doing for our restaurant party, i.e. a nacho bar. We are also doing the wings and chicken fingers and fries, etc. but at home I'd break out a large bag of nacho chips and have toppings of cheese, chili, jalapenos, pico de Gallo, lettuce, black olives, salsa, black beans and corn.

The host of the party should not be in the kitchen trying to keep everyone else fed while THEY watch the game.

Regards.....................the Chiefjag

I want to be watching the game...not serving everyone else, so I'm doing a nacho bar too!

Quote:Got the ribs in a brine and some Schwartzbier and Double Bock in the 'frige right now

I went all out for the divisional games - trying to keep it nice and lazy this time.  No party - no guests - just a Patriot-loving, New Englander girlfriend, bunch of beer, pizza and nachos.  I do make my own corn tortilla chips though.

The brining ribs has me re-thinking my position a bit, LOL.

Oh well. Just got invited to a Super Bowl party so I won't be cooking anything. And it's only in the front of the neighborhood, so within stumbling distance.

I like using the smoker because it keeps me busy during the day. Don't hurt that the food usually comes out tasting pretty good either.

Apparently I'm having Mexican which I'm happy about. Tacos I don't have to fix are the best tacos around. I love them but for just my husband and myself the hassle isn't worth it.

I've got a few things going on...

I want to brine some ribs and then cook them up in the smoker. I don't typically do a lot of barbecue sauce with smoked ribs.

Since the smoker will be going, I'm gonna have to throw some wings in there as well. And that also means that I'm going to have to make some new sauces. I got a pretty good garlic Sriracha sauce, but I want to try to make a Ginger/Asian style sauce. Just not  teriyaki.

Will probably do baked jalapenos stuffed with a Gouda/cream cheese combination as well.

As for dessert, I'm going to try "mug" brownies. Just put brownie mix into a coffee mug, microwave for about a minute and serve! The formulae are as follows:
  • 4 tablespoons brownie mix / 2 tablespoons water - 1 minute
  • 6 tablespoons brownie mix / 3 tablespoons water - 1:15
  • 8 tablespoons brownie mix / 4 tablespoons water - 1:30

Just to recap (does this make me narcissistic?)

Ribs turned out pretty good even though I think I botched the brine. Oh well, it was my first go at it.

Wings were very good and probably the favorite. I did the sriracha garlic, sesame ginger, and plain ol' Buffalo. Quick tip; if you ever have the option, go with smoked wings. They are the best choice, in my opinion at least.

The stuffed peppers went over well although it sucks making them. I'm not good enough with a knife to not make my eyes water.

Made a black bean salsa dip as well. Super easy to make and always derishous.

Mug brownies won the night. Did four "large" spoonfulls of Ghiradelli Dark Chocolate mix into a mug and microwaved for 1:15. Topped with ice cream and voila!

Nice.

On the peppers/onions  -  just sharpen the heck out of your knife. It's the friction in cutting that releases the sulfenic acids. The sharper the blade - the less friction.

Gotta' share another fun Asian wing sauce recipe with you.  Kinda' stumbled into this one just using what I had in the fridge but I keep coming back to it.

1/3  cup Hoisin sauce. - 3 heaping Tablespoons Sambal Oelek -Thai Chili Paste - 1 tablespoon Chinese Hot Mustard - 2 teaspoons Chili infused Sesame Oil - 1 tablespoon butter.  Simmer and stir on stove before tossing wings in mixture.

BTW.  I ate way too much yesterday and I have lotsa' leftovers to deal with. Might have to use that gym membership this month :teehee:
