But in my experience you'll probably end up with a "tannic" or "hot" wine, meaning it will give you an acidic or mouth drying effect. Some people like that though, one of our better wine regions in Ca is pretty famous for that style. Wish I could help more! If you're making it a regular hobby and have any specific questions I know some actual enologist that can probably answer some stuff. You're dead right Senor, did a bit of research and others compared the wine kits taste to that of hot wine too. I'll take you up on that cheers, its my first brew and I'm a total novice so I'm sure it isn't going to go smoothly.
