Who are the players you love in this draft?

Here's my list. Obviously it's all relative, if I say I love a probable top 10 pick then I'm saying I think he´ll be elite, if I say I love a day 3 pick I'm saying there's a chance he can upset the odds and be a relevant NFL player. I won't pretend I've spent hours scouting all these dudes, this is just a list of players that I've watched a bit of, read about, and like what I hear and see. I've included where I would expect to draft them.

I have a much shorter list:

QB: I like Grier's value in the third. If he's there, grab him, at the very least you have a capable backup developing.
WR: Terry McLaurin is this year's draft crush. Unfortunately, we'd probably have to trade into the mid to late 2nd to get him.
TE: I'll be sad if we don't grab Hockenson at 7.
OL: Ford, Risner, Lindstrom all intrigue me.
Defense: The only guys I'm really over the moon about are Q Williams and Devin White, and neither of them will likely be there at 7.

My list is very similar to yours. I would only add Nasir Adderly (2nd round), Keelan Doss (day 3) and David Montgomery (3rd round). 

I'd love it if Ford was there in round 2, but just don't see that happening. Would still be very pleased with Risner or Lindstrom.

Haskins - love this kid. Wish we could take him, but it makes zero sense now.
White - would love being able to get this kid. He could be that leadership on defense we missed when we lost Poz.
Hockenson - would love this pick too because of the high need at position, but also he can block and catch. This pick covers all areas of needs.

Everything out of these I will like, but depending on who it is, might need some convincing. The later picks are so random and unpredictable, I don't pay much attention until the picks are made.

Grier - If he is there with the last 3rd rounder...would seriously consider.

The forgotten man seems to be Jordan Scarlett. I think he'll be a real good pro. But from all I read and see, I'm wondering if he gets drafted at all.
