I think it has to do with the show catching up with the books.
With so much of seasons 7 & 8 not being written they had to go by bare basic information that Martin had already decided. 
And they couldn't (I suppose they could have but didn't want to) make up a lot of the in between stuff which would have possibly interfered with how Martin wanted to finish the writing.

I suppose the HBO show creators were probably wanting to leave Martin with as much room to do what he wanted with the books while still giving the fans the show within a timely manner as well as getting the ending right (which is the most important part)

I too felt the rush of the season every time an episode would start and Jon Snow was in a different part of the map.
Without the books to follow, I think any filler episodes would have been dead material with a lot of walking.
I disliked the 'rushed' feeling... but I'm glad they didn't turn it into a Lord of the Rings movie (a lot of time spent walking)
