First off, 7% interest is not all that crazy.  Back in the late '80's it was 18% and when we bought our house it was 6.75% which was a real bargain.

People eat out more than ever and when they don't they do UberEats, meaning they pay someone $5+ to get their restaurant food delivered.   

Beer & Mixed Drinks.  Don't get me started on $7 beers, $8+wines, and $10+ single pours being the norm.  

...... OH, do we want to get into kids living in 1br apts because they don't want to share a group living arrangement.

All accurate in my experience.
Always had roommates until I was married and when I got married we had a 2 bed apt. So financially that was like having a roommate.
We rarely went out.  If we did it was for pizza, wings, and beer.  We knew there was better food but we were trying to save money and weren't ashamed of it.
And I see my younger cousins and her younger cousins enjoying 1 bed, going out every night to trendy bars with unique cocktails, Disney annual pass type lifestyles. 
Although I will say, they aren't complaining about prices being too high.  They know they could make better choices and plan for the future but they just don't want to.  I'm the one complaining about the high prices, not them.
