Think like bacon wrapped scallops but with dove breast. That's what I do at least.

The grape skins will adhere to the drying paper as the water dries and introduce mold and the paper can trap moisture underneath itself with the same result. It's not good. 

I'll probably have to "slip n flip" 25,000 trays.

No, that's me trying to prevent having to make a claim. Insurance would pay out about half of the crops current (and rising) value.

I'll have the trays slipped, meaning you pull them an inch over to break any seal they form with the soil, then have the bunches flipped to expose the moist underside of the bunches to the sunlight. Kinda like flipping a pancake. 

Basically it's just extra costs that I'll have to incur. I'm real glad I didn't machine lay this year.

Something like 10 people can handle it, but it ain't fun. 25k trays with about 7lbs of loose fruit on them haha. What a mess. 

Laying them down is much harder and more expensive though. I usually do it by machine.
