It's a trend. A big part as to why it's a want or need is because of what it means success rate wise.

Dan Quinn - Calls the defense
Sean McDermott - Calls the defense
DeMeco Ryans - Calls the defense
Andy Reid - Calls the offense
Sean McVay - Calls the offense
Kyle Shanahan - Calls the offense

The head coach, especially if it's their field of expertise, probably has a better feel or general sense of direction or even a better gut feeling than some of the other guys on the staff.

This doesn't lessen or cheapen the role of a defensive coordinator or offensive coordinator. There's still match-up's that need to be identified on film, tendencies that need to be found, lingo and jargon that needs to be instilled or educated for each skill group, another set of eyes on gamedays from the box as well.

A head coach is on the sideline calling the shots, running the team, maybe calling the offense, maybe calling the defense. He may not see or notice from the sky box the way a true OC or DC can see it to make adjustments. 

"Hey, #53 is getting beat routinely on this specific formation when we send #85 in his area, we need to look back at this play in about another series or two and make it known to the QB that he needs to prioritize this look" 

or 

"Hey, #74 looks relatively weak and he's not seeing #53 knifing around on his side, even though the play was designed three times now to flow right, we need to get ready for a play coming to the left, perfect opportunity to send #53 inside on a 3rd and long to throw off #74".

Typically, the only part of the OC's job the HC is usurping is the calling of plays on game day and maybe the game script. Everything else during the course of the week from film study, play selection, weakness/strength identification, installation, walk throughs, start/sit decisions, etc. are all done primarily by the OC.

The HC would be involved in all of those areas to some degree of course, but most teams -- even those with culture/CEO HC's -- are involved in those aspects on both sides of the ball.
