My daughter was going to make a homemade pecan pie. My tastebuds were all primed for it. Then she got sick day before yesterday. Not the rona. She called this morning and said her fever broke and she felt better, but I told her to stay home and not be a Typhoid Mary. So now it’s apple pie only.

Just finished a piece of pecan.  Can't decide between apple and cherry for my next piece.
When you get into the endzone, act like you've been there before.

First of all, no issues yesterday.

Second, my daughter is a baker. Even sells professionally. She always makes some fancy-shmancy dessert. Brought some special pumpkin pie, cupcakes, and some sticky figgy pudding with a rum glaze.

Don't get me wrong, everything was delicious. But I missed my regular ole pumpkin pie with whipped cream and pecan pie with vanilla ice cream. I'm going to have to run to Costco and grab one of their pecan pies this weekend.

I had a key lime tart for dessert, it was really good but so rich I could only finish half.

Yesterday, my wife made a seafood casserole, consisting of crab meat, shrimp, and scallops.  Plus some other ingredients to make it creamy and rich.  I ate it for lunch until my stomach hurt.  Then I did the same at dinner.

That sounds delicious! Is it solid enough that you your wife can make you a sammich with it?

I need this recipe. Can you get her to share it? I am intrigued to know what goes into a seafood casserole but I just also want to eat it.

My dad and step mom always did a clam boil every Christmas or Thanksgiving, alternating which day got it every year. I no longer live in Jacksonville and they divorced last year so no more holday clam boils. One year they froze a pot of it and the following late summer brought it to me when they were passing through on their way to New England. Not as good as fresh but it was still a nice treat. I miss those days.

My nephew is going to Poland! I'm excited for him. He is a new Marine being trained as an embassy guard and will graduate next month. He got his orders and will be stationed in Warsaw. He wanted Japan but is excited to be going to Europe.

Have any of our veterans here been to Poland? I wanted to visit when I lived in Germany but 9/11 cut a lot of travel plans short so I never got to go.

I'll have to do some research on this. So excited for him.

From the U.S. embassy website:

Marine Security Guard Detachment

The mission of Marine Security Guards is to provide protection to mission personnel and prevent the compromise of national security information and equipment at designated diplomatic and consular facilities.  Marine Security Guards are prepared to execute plans for the protection of the mission and its personnel as directed by the chief of mission or principal officer through the Regional Security Officer.

I remember seeing Marines at the U.S. Embassy in The Bourne Identity and wondering what their duties were, if any, outside of standing guard because that would be boring as hell. I hated standing fire watch or any other guard duty that kept me in one location for extended periods of time. Working at an embassy would be very different than the kind of duty I pulled though.

She says there is a recipe, but she did a lot of substituting.

We couldn't find any decent fish at Costco on Wednesday, so she substituted scallops.   She cooked (braised?) all the uncooked seafood before she put it in the casserole.

The scallops were cut into 4 pieces each, and the shrimp were cut into 3 pieces each.  She used a container of crab meat that cost $35.  There was about a pound of scallops which cost about $22.  There was a lot of shrimp.  She used mayonnaise to bind it all together.  She said the recipe called for a cup of mayo but she says she just eyeballed it.  She also put in rice, celery, pimientos, one whole diced onion, and she covered the top with crumbled Ritz crackers.    She baked it in the oven at I think 325 or 350 for I think a half hour or 45 minutes maybe.

She says the recipe calls for mushrooms, but she didn't use any.

After 39 years I’ve dismissed it in the songs.  Now that I see in mentioned in a thread, I’m intrigued to ask, what the hell is figgy pudding?

Oh, and it’s the season to share/give.  Share or give us this seafood casserole recipe!

My daughter's in-laws are staunch Republicans and will definitely not listen to [BLEEP] from anyone.

I am really nervous this is going to turn into a [BLEEP] show.

Been to parties like that and I opted to sit outside in the snow and drink a chilly Miller Lite than listen to any of that hogwash.

I learned my lesson, though. Next time, I'm bringing my own beer to the festivities. Screw a Miller Lite.

TL;DR version: It's a British Christmas dessert, kind of like cake, that the article describes as "fruitcake crossed with Haggis then set on fire."
