Did a bunch of it between '98-'05. Pretty out of touch with the software and peripherals that are popular currently.

Fruity Loops

It was what me and my friends messed around with. Fairly user friendly. You can get a free trial of it I believe and the basic stuff is enough to play with and see if it's worth paying for.

Yeah - I'm not sure on that. Most guys I know are using Ableton and all kinds of wild trigger pads. 

Akai still makes several versions of the MPC sampler and there's a free beat making software that comes with it I think.
