I like chewing on those remaining bits of coconut that emerge from between the teeth a half hour later.
You know what else I like? Orange juice with so much pulp it almost has to be chewed.

It does suck because time is up! Probably just gonna have to roll with it.
Usually delayed ripening would point to a potassium deficiency, but I was slightly over the suffiency range so that's not it. Crop size will delay it but usually not to this degree. I'll have to take a look at my irrigation scheduling and canopy size next year.
I'm actually kinda perplexed. It could be my rootstock just isn't capable of transporting enough nutrients for the crop I'm hanging. I'm going to have to shoot a smart guy an email.
You should market it as Fountain of Youth wine: “Made from grapes which refuse to ripen.”
Might taste a little ‘puckery’, though.
